What’s for Dinner?
It can be overwhelming to search the internet for “healthy recipes” the results are endless. Here are a few of my recent favorite recipes. I love recipes that have all the things in one (protein, fat, carbohydrates, fiber, and flavor)! Otherwise, my go-to is a big sheet pan of roast vegetables and potatoes and pair it with easy to cook meat like pork loin or chicken. Hope this helps get some ideas going 😊

· This recipe is warm and cozy for a cold day. Lots of fiber, nutrients, veggies and flavor. 5 Stars!
· I added did extra carrots and added mushrooms; you could also add other vegetables of your choice.
· Used chicken bone broth in place of chicken broth for extra nutrients and protein. I skipped the cream because I did not have any and it still taste great.
· I think this recipe would freeze well too, but I haven’t tried it

· Can use gluten-free noodles for a gluten-free options. I like the brand Jovial best for gf pasta
· Feel free to up the veggie amounts in her with extra spinach, tomatoes and red peppers

· I have also made this recipe vegetarian and added extra beans

· I sauteed up onion, peppers, and mushrooms and add them to the hashbrown mixture
· Makes for an easy dinner or breakfast meal prep!

· I used gf oats for a gluten free option
· Freezes well, if you are lucky enough to have any left over 😊
